Fall Pancakes

Buttermilk Apple Flaxseed Pancakes
1 c all purpose flour
1/2 c whole wheat flour
1/2 c ground flaxseed meal
2 t baking powder
1/2 t baking soda
1/2 t salt
1/2 tsp nutmeg
1/2 tsp cinnamon

4 T melted butter
2 eggs
2 c buttermilk
1.5 apples cut into small chunks

Mix dry ingredients in a medium bowl and set aside. In a large bowl, whisk eggs until well mixed. Add butter and whisk until well combined. Add buttermilk and mix.

Fold in dry ingredients until just combined, then fold in apple chunks
Grease skillet with butter (or oil) and I think everyone knows how to make pancakes. You can add sliced bananas if you don't like apples. Since this is apple season I thought they would make these pancakes extra yummy!
