Roasted Tomatoes

Summer is the time to eat tomatoes! They are so delicious and juicy straight off the vine! Grocery store tomatoes have very little flavor and are so disappointing. Most of the tomatoes in supermarkets come from Florida, where they were drenched with pesticides and fertilizers before being shipped to you.

Roasting is a terrific way to enjoy fresh tomatoes.When they are halved and roasted, they make excellent additions to salads, main courses and sandwiches. And of course, you can cook or purée them for marinara sauce.

Roasted Tomatoes
10 fresh, organic tomatoes (heirlooms are great!)
Salt and pepper, to taste
1 tbsp. of Extra Virgin Olive Oil

1. Preheat the oven to 400 degrees.
2. Halve the tomatoes and make slits in each half.
3. Sprinkle them with salt, pepper and olive oil and place them skin side down on a pan.
4. If you like, turn them over mid-roast. At this point you may add more olive oil (optional).
5. Roast 35 to 40 minutes, until they are juicy and starting to wrinkle and darken.
You’re ready to enjoy your roasted tomatoes!

  1. ORRR instad of getting them from Florida, you could get them right in Valpo from Nate's Garden and THEN roast them :) Chemical-free and everything!!
