This salad would be a delicious addition to any holiday party! 
Apple, Pecan, & Cranberry Quinoa Salad

1 package of plain quinoa (cooked, as per the instructions on the box)
1 cup of dried cranberries
1 green apple
1 handful of pecan pieces
1/2 or 1 cup of red onions (depending on your taste)
2 tablespoons of extra virgin olive oil
1 tablespoon of apple cider vinegar (I used a little less)
1 tablespoon of maple syrup

Chop up all the ingredients into small pieces and add to cooked quinoa. Stir ingredients while adding the olive oil, vinegar and syrup. Let cool slightly before covering and placing in the fridge. Serve chilled. Enjoy!
